Spiced Pumpkin Muffins

Pumpkin Spice Muffin

The kids will never even know there’s hidden goodness in every bite and they have an added bonus of being gluten free….

 

Serves approx 8 muffins

Ingredients

¼ cup coconut flour or almond flour

1/8 teaspoon sea salt

½ teaspoon baking powder

1 tablespoon ground cinnamon

1 tablespoon ground ginger

3 large eggs

½ cup freshly roasted pumpkin

¼  cup rice bran syrup or maple syrup

2 tablespoons butter

1 teaspoon vanilla essence

Instructions

In a food processor mix together coconut flour, salt, baking powder, cinnamon and ginger

Mix in eggs, pumpkin, honey, butter and vanilla essence

Transfer batter into paper lined cups or a muffin tray

Bake at 180° for 25 minutes

Enjoy while warm if you can! Xx
